Yield: 6; Prep time: 45 minutes
- 8 oz elbow macaroni or other pasta of your choice, uncooked
- 4 tablespoons butter (½ stick)
- 4 tablespoons flour
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon ground mustard seed
- 2 cups milk
- 2 cups grated or shredded cheese, mixture of mild cheddar and mozzarella
- Start macaroni.
- Meanwhile, mix dry ingredients together (except macaroni and cheese).
- Melt butter, then stir in dry ingredients and whisk until smooth.
- Add milk and stir until thick (white sauce.)
- Add cheese to white sauce.
- Preheat oven to 350° F.
- Grease 9" x 13" inch baking dish, coating dish with breadcrumbs if desired.
- By this time, macaroni should be done.
- Drain it, then pour into baking dish
- Pour cheese sauce over macaroni and mix to spread evenly.
- Top with additional grated cheese and breadcrumbs, if desired.
- Bake for15 to 30 minutes, as desired.
